Gusto's Salads & Side Dishes

Antipasto Salad

Serves 6

1/4 cup red wine vinegar
3/4 cup olive oil
Dried herb mix
pinch crushed red pepper
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1 teaspoon dried parsley
1/2 tablespoon fresh lemon zest
Pinch salt
Pinch Fresh ground pepper
2 - 1/2" thick slices Gusto cotto salami, cubed
2 - 1/2" thick slices Gusto black forest ham, cubed
2 - 1/2" thick slices provolone cheese, cubed
8oz fresh mozzarella cut into pieces about the same size as above
8oz marinated artichokes, quartered (do not drain)
8oz kalamata olives, drained
8oz roasted red peppers, drained, cubed
1 pint grape tomatoes
1 head romaine heart, diced into bite size pieces

For dressing
Whisk vinegar, oil, dried herb mix, lemon zest, salt and pepper together
Add all remaining ingredients to dressing except for the lettuce
Let flavors marry for several hours under refrigeration
When ready to serve, pour marinated ingredients over lettuce, toss and serve
