
Gusto's Salads & Sides Dishes
Braised Kale
Serves 6
3 quart water
2 teaspoons kosher salt
1 teaspoon black pepper
1 teaspoon granulated garlic
1 tablespoon season salt, like Lawry’s
1 tablespoon Tabasco
1 Gusto smoked turkey necks, or 2 Gusto smoked turkey tails
1 large bunches dark green kale
1 tablespoon butter
1. Boil water with 5 seasonings added
2. Add smoked meat and simmer uncovered for 1 hour
3. Remove meat and skim the surface of the liquid
4. Roll a few leaves of kale at a time and cut into 1 inch strips
5. Add kale to simmering water and cook for 40 minutes
6. Drain liquid, toss with butter taste and adjust seasoning
