Gusto's Sandwiches
Cuban Sandwich
Serves 6
1 1/2 pound pork loin roast
Kosher salt and pepper
Olive oil to coat pan for searing
Large wide French bread roll enough for 6 good sized sandwiches
Mayonnaise
Sweet and hot mustard
1 1/2 pound Koge Bay pork shoulder picnic deli ham sliced
6 slices Swiss cheese
12 sandwich sliced dill pickles
Panini press (not necessary)
1. Preheat oven to 350 F
2. Trim roast of fat
3. Salt and pepper all sides of the roast while a skillet is heating on med-high, coat with oil
4. Sear all sides of the roast until well browned
5. Place the seared roast in an oven safe pan preferably, on a roasting rack
6. Cook uncovered until an internal temperature of 145 F is reached, approx 30 minutes
7. When the pork roast is done remove it from the oven and let it rest
8. Portion and slice open 6 pieces of bread
9. Spread mayonnaise on one side and mustard on the other
10. Arrange Koge Bay Picnic deli ham, Swiss cheese and pickles on the bread
11. Slice the roast into enough thin slices to complete your sandwiches
12. If you are using a panini press, lightly coat the outside of the sandwich with
cooking spray (Pam), place into the press to heat through
Alternatively you may place your sandwiches open faced under the broiler in your oven to heat and melt the cheese
