Gusto's Salads & Side Dishes
Loaded Baked Potato Salad
Serves 8
4 slices Gusto hickory smoked bacon
3 pounds small, waxy potato (such as Yukon gold)
1/4 cup olive oil
1 cup mayonnaise
1/2 cup sour cream
1 small sweet onion, chopped fine
3 green onions thinly sliced
3/4 cup cheddar cheese, grated
Fresh ground black pepper
Kosher salt
1. Cook 4 slices Gusto hickory smoked bacon crispy, crumble and set aside
2. Cut the potatoes into 1/2 inch cubes, leave the skin on
3. Place the potatoes in bowl and toss them in olive oil
4. Spread them out onto a baking sheet
5. Season with salt and fresh ground pepper
6. Roast the potatoes in a 375 F oven for about 45 minutes to 1 hour
7. Stirring about half through
8. Remove the pan from the oven and let the potatoes cool completely
9. Place them in a bowl
10. Add the mayonnaise, sour cream, bacon, onions, and cheese
(Be sure to add all the ingredients and taste before adding any more salt)
Serve with your favorite Gusto deli meat sandwich
